What Are Poured Lollipops?

Poured lollipops have a clean and smooth finish and take on whatever shape you pour them in to.

Poured lollipops are made by heating sugar, corn syrup, and water (or another liquid) to a high temperature—usually around 300°F (the hard crack stage). Once the mixture reaches the right consistency, it’s flavored, colored, and carefully poured into molds. After cooling, the result is a glossy, glass-like candy that’s smooth, shiny, and perfect for showcasing vibrant colors or fun designs.

Pulled lollipops, on the other hand, take candy-making to the next level with a bit of old-fashioned elbow grease. The sugar mixture is cooked similarly to poured lollipops but is then cooled slightly and stretched repeatedly. This pulling process aerates the candy, giving it a more opaque, satiny appearance and a slightly lighter, chewier texture.
